1 cup canned (no salt added) cream-style corn
2/3 cup all-purpose flour
1/2 cup cornmeal
1/2 cup liquid egg substitute (I used the Egg Beaters)
1/2 cup fat-free plain Greek yogurt
1-2 packets of No Calorie Sweetener
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup diced jalapenos (optional)
1. Preheat oven to 375 degrees.
2. Mix all ingredients in a bowl and stir. (I only used 1 packet of sweetener, it's up to you.)

1. Preheat oven to 375 degrees.
2. Mix all ingredients in a bowl and stir. (I only used 1 packet of sweetener, it's up to you.)
3. Either spray a 12-cup muffin pan, or line it with muffin liners. (I LOVE my silicone muffin liners!)
4. Fill each baking cup evenly.
5. Bake in the oven for 20-25 minutes until muffins are golden brown and firm in the center.
6. Enjoy one, two, or three! (As THREE are the same calories as ONE normal recipe one!)The Skinny: Serves 12 @ 71 calories each
