For the entire recipe you will need:
1 stick of butter
3 eggs
flour
baking powder
baking soda
sugar
1 container of frozen lemonade concentrate, thawed
vanilla
milk
1 lemon (juice and rind)
yellow food coloring
8 ounces of cream cheese
powdered sugar
1 pint of blueberries
1 pound of strawberries, sliced thin
Lemonade Cake
1/3 cup butter, soft
3 eggs
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups sugar
1/4 cup frozen lemonade concentrate, thawed
1 teaspoon vanilla
1 1/4 cups milk with lemon juice mixed in (Use almost 1 1/4 cups but add in 1 tablespoon of lemon juice)
1 teaspoon of lemon extract
6 drops of Yellow food coloring
1. Grease and flour 13x9x2-inch baking pan and preheat oven to 350 degrees F.
2. In large bowl, with electric mixer, beat soft butter for 2 minutes until whipped.
3. Beat sugar into butter.
4. Once butter and sugar are well combined, mix in one egg in at a time. Continue to beat for 2 more minutes on high.
5. In sifter, add flour, baking soda, baking powder, and salt.
6. In large liquid measuring cup, pour milk almost to 1 1/4 cup. When almost to the line, add in 1 tablespoon of lemon juice.
7. In same large liquid measuring cup, add in 1/4 cup thawed frozen lemonade concentrate, vanilla, lemon extract, and food coloring.
8. Return to the butter mixture and pour in small amount of liquid. Beat on high. Next sift in part of the flour mixture. Continue to beat on high. Repeat until flour and liquid mixture are all combined. Make sure to scrape the sides of the bowl.
9. Pour cake batter into greased and floured 13x9x2-inch baking pan.
10. Bake for 30 to 35 minutes until a toothpick inserted in middle comes out clean.
Now frosting time!
Lemonade Frosting
1 cup of butter, softened
8 ounces of cream cheese, softened
1 teaspoon of lemon extract
1/2 cup thawed lemonade concentrate
3 cups powdered sugar
1. To prepare frosting, place softened butter butter and cream cheese in large bowl.
2. With mixer, combine butter and cream cheese until smooth.
3. Add in lemon extract and lemon concentrate. Continue to mix with mixer.
4. Add in powdered sugar and mix until fluffy.
5. Chill 1 hour and then spread on cake
Decorating
You can decorate the cake anyway you like, but since it's the 4th of July we decided to go with the good old flag decorations. We sliced the strawberries and placed them in a stripe pattern. The cake turned out super cute and I am sure it will be a hit at his work tomorrow!
