22 Healthy Freezer Meals for Maternity Leave

Many of you might not know this, but my little sister Christi (who also writes for this blog) is 9 months pregnant. Here is her beautiful pregnancy photo here:

With her expecting her first child, one of the main pieces of advice I could give her is to make some freezer meals. I didn't make them with my first child but I stock piled them with my second and honestly it was a HUGE lifesaver! **PS- This is going to be the longest blog EVER!!**

Over the last few months we both have pinned quite a few freezer meal ideas but there were a few problems with some of them:

1. They Are Unhealthy
 Many of them use bricks of cream cheese, loads of shredded cheese, and lots of white pasta. We really wanted meals we felt like we could eat and not feel super guilty for just eating enough calories to support a normal sized human for a week. 

2. The Prep Time Is Ridiculous
There are a lot of recipes out there that the prep time is crazy. I don't want to sit there and wrap each individual thing, saute this for 2 hours, etc. We wanted some that we could throw together and be done! 

3. Cheap Protein & More White Pasta
Many of the bulk freezer meal recipes out there claim to make '20 Meals for $50' or some other cheap amount of food. I looked into some of them and when you tell me to use 1 frozen chicken breast to make 4 meals, that just seems crazy. Protein is a good thing, it keeps you fuller longer and makes you eat less. And last time I checked, adding more white pasta to a meal to make it "stretch" is honestly not good for you. With our meals here, we used protein and we used GOOD protein. We used lean beef, boneless skinless chicken, and cut our own pork loin. 

4. Sweet Meat
Christi does not like sweet sauces on meat. I don't mind them. However, in keeping with the somewhat healthy theme, adding less sugar is always a good thing in my book. 

5. Many Freezer Meal Are Gross
Some things DO NOT freeze well. It's true. I would say about 50% of the meals I have tried to make into freezer meals just didn't thaw and bake up as good as they were the first time. We wanted to try to find recipes that actually taste good after they were frozen and I am confident we did. 

With all that said, we had a little bit of a challenge picking out the meals, but because I have made frozen meals in the past I had an idea of what froze well and what didn't. So here is our list of

*Disclaimer- I am saying healthy because the calorie content of these meals is very reasonable for the portion size. You will notice in many of the meals we did use *Cream of Whatever* soup which many people do not find healthy. We used the 98% Fat Free soup, as a means of simplicity in preparing these meals. If you are not a fan these canned soup, feel free to look up a recipe to make a homemade version. I was unsure how the homemade version would freeze up so I stuck with the canned because it has worked in the past for me. 

Chicken and Wild Rice  x 4
Chicken Taco Soup  x 4
Goulash  x 4
Tater Tot Casserole  x 4
Creamy Ranch Pork Chops  x 4
Parmesan Pork Roast  x 2

That's a grand total of 22 meals!
{We did not use all that cheese (only a half of one bag) but we did use the rest of the ingredients!}

Now before you begin, here are a few tips for you:

Tips For Freezer Meals:
If you haven't ever prepared a bunch of freezer meals, I can give you a few tips:

1. Buy Half Size Aluminum Steam table pans and lids.
They are about $5 for 15 of them and $5 for the lids. They are great to keep on hand and less dishes are always a good thing with new babies.

2. Buy Crock Pot Liners & Gallon Bags
Again, less crock pot cleaning is always a good thing. You will need the gallon bags for some of the meals. 

3. Buy In Bulk
We purchased a large pork loin and cut our own pork roast and pork chops. You get so much more meat for a lot less cost. Also, we bought boneless, skinless chicken, and 88% lean ground beef to keep things healthy. Large bags of frozen veggies are the best and cheaper then the canned. 

4. Prepare throughout the week
-Dice up onions (or other veggies) 
- Brown ground beef
- Use a crock pot to cook your chicken (just throw it in for 8 hours with no water) and then use a Kitchen Aid Mixer to shred it (or two forks)
- Cook up rice another day
- Do not cook up pasta in advance. It will stick together. 

5. Make a Recipe List
Know how much you need of each item and organize your ingredients at home by recipe. 

6. Make a Shopping List
Go to the store with a list of what you need organized by department.

7. Print Labels For Your Containers
Label your containers earlier in the week and set them with the ingredients. Each label should give you the recipe name, calories, how to prepare, and if any other ingredients are needed. 


After you have all that done, you are ready to begin. It took us about 2 hours to assemble all of these. Now the recipes below are in one meal quantities. I left them this way so you can decide how many meals you want to make and just double, triple, quadruple...whatever the recipe. 
So without further adieu here are the recipes:

Chicken and Wild Rice 
1.5 cups wild rice 
10.75 oz  cream of 98% fat free mushroom soup
10.75 oz  cream of 98% fat free chicken soup 
1 small can mushrooms, drained
16oz chicken breast
1 cup slivered almonds, optional

1. Cook rice according to package. Mix in both cans of soup and mushrooms. 
2. Pour in to freezer dish and top with 1 pound of chicken pieces and sprinkle with slivered almonds. 
3. Double wrap in heavy duty foil, label and freeze. 

FREEZER INSTRUCTIONS: Thaw and bake uncovered at 350 for 1 hour until chicken juices run clear.

Serves 4 @ 456 calories

Chicken Taco Soup
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can of chicken broth
2 (10 ounce) cans diced tomatoes with green chilies
1 (1.25 ounce) package taco seasoning
12 oz chicken breast
Combine all ingredients into a Ziploc bag. Freeze. 

FREEZER INSTRUCTIONS: Thaw and cook on low for 6-8 hours. Serve topped with shredded Cheddar cheese, sour cream, or tortilla chips, if desired

Serves 6 @ 391 calories
Goulash
1lb ground 88% lean beef
10 oz  tomato soup
6 oz Tomato Paste 
2 cups uncooked whole wheat elbow macaroni
2 Tbsp Italian seasoning
1 can (15oz) corn, drained
1 tsp garlic powder
1 tsp onion powder
4 oz shredded cheddar cheese

1. Brown Ground beef (earlier in week)
2. Cook noodles according to package, drain (on day of)
3. In a large bowl, combine soup, garlic powder, onion powder, tomato paste, Italian seasoning, noodles and ground beef.  Stir in corn.
4. Transfer to freezer baking dish and top with cheese. 

FREEZER INSTRUCTIONS: Thaw and bake uncovered at 350 degrees for 30-40 minutes until heated through and melted cheese.

Serves 4 @ 390 calories

Tater Tot Casserole
1 lb. ground beef 
1 small onion, finely chopped 
10.75 oz  cream of 98% fat free mushroom soup 
1/4 cup skim milk 
1 cup frozen mixed vegetables
4 ounces Shredded Cheddar Cheese 
1 lb. tater tots 

1. Brown Beef (earlier in week)
2. To the ground beef stir in frozen veggies, soup and milk. Mix well. 
3. Pour soup mixture into bottom of pan. Top with potato nuggets and then shredded cheese.

FREEZER INSTRUCTIONS: Thaw the meal in the fridge overnight and then bake at 350 covered for the first 30 minutes. Uncover and bake until hot. 

Serves 6 @ 369

Creamy Ranch Pork Chops
4 Pork chops
1 Can Cream of chicken soup
1 Package Ranch dressing (dry)

*Cut the bottom 6”off both ends of loin for roast and then cut the center 1" thick to make pork chops
1. Mix cream of chicken soup and ranch powder together.
2, Place Pork Chops in crock pot bag. 
3. Pour soup mixture on top. 
4. Twist crock pot bag and tie. Place in labeled gallon freezer bag. 

FREEZER INSTRUCTIONS: Thaw over night. Place in crock pot on low for 6-8 hours. 

Serves 4 @ 473 calories

Parmesan Pork Roast
1 boneless whole pork loin roast 
2/3 cup grated Parmesan cheese
1/2 cup honey
3 tablespoons soy sauce
2 tablespoons dried basil
2 tablespoons minced garlic
2 tablespoons olive oil
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup cold water

*Cut the bottom 6” off both ends of loin for roast
1. Place pork roast in crock pot bag. 
2. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil and salt;
pour over pork. 

FREEZER INSTRUCTIONS:  Remove from freezer and thaw in fridge for 24 hours.  Cook on HIGH for 3-4 hours or LOW for 6-7 hours. Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice roast; serve with gravy. 

Serves 6 servings @ 518 calories


So that's the meals! I know many of you are wondering how much the meals cost us, so I will tell you. We made 22 meals for $214.04. That's $9.73 for a meal that feeds 4-6! I know that is a little higher priced then some other websites claim to be, but our meals have a lot of protein in them and we bought the healthier version of ingredients which always cost more

Pink & Green Princess First Birthday Party

It's official, my little baby girl Remy turned one!! I still can't believe how fast the time has gone! My little girl came in to this world weighing a petite 6 pounds 10 ounces and had the thickest head of hair!

I decided to keep up with tradition and throw my daughter a 1st birthday party! (See my son's Halloween themed first birthday party here.)

I wanted a princess themed birthday party, but the more I looked into the decorations the more I thought it just looked too "store bought". I always like designing my own stuff, so I came up with some decorations and planned the party! Here are a few shots of the decorations:
This is her 1st Birthday Cake. I made it from one of those large cupcakes molds and decorated it with a hand painted candle (which I did with nail polish) and a crown from the store. 

The guests dined on homemade cupcakes decorated with pink and fudge frosting and sprinkled with crystallized sugar. 


The tops of each cupcakes were adorned with handmade (by me) white and dark chocolate molded crowns and home designed paper cupcake toppers. 


Here's my cute cupcake stand that housed all the cupcakes for the guests.

Baby 2.0: The Good, The Bad, The Ugly of Postpartum Life

It's now been 2 weeks since I had my little Remy! Each day is more and more of a joy to see her little movements, smiles, and expressions. Remy is my second child and having an almost 2 year old running around at the same time as taking care of a newborn can be exciting. Fortunately, I have my in-laws here for another few days to help me out while I heal up from my c-section.

With that being said, I am 2 weeks into postpartum life and I feel that I must have blocked a lot of this phase after Aiden because many new things I am experiencing I don't remember having with him. With that being said, I thought I would write a post on the good, the bad, and the ugly of this phase.

The Good
No Longer Pregnant- Of course this would be number one! I love being pregnant but the last few weeks of being large and uncomfortable, the heartburn, and the lack of sleep due to a baby partying hard at 3am makes it tough. Having her out is very nice!

Baby Faces- The look on a newborn when they have a full belly after eating is priceless. It's a combo look of almost being drunk and happy. Sometimes we will get the largest grin on her face, I know it is most likely gas, but it does truly melt your heart.

Big Brother Fun- Her brother, Aiden, is still somewhat unsure what to do with her, but each day he gets better. We have to work with him on touching her soft and being gentle, but I am sure he will learn that soon enough. It is very sweet to see him kiss her on the head and quite humorous when he mimics her cry. Each day is a new adventure with the two.

The Bad

Emotions- This comes with all pregnancies. Some women have it worse then others, but I just keep reminding myself that it's just hormones adjusting and I won't let them take over my life. If I feel like crying, I do and when people ask what's wrong, I just tell them it's hormones. If I get mad, I trying to calmly remind myself that it's hormones and this too shall pass. Basically, I probably say "it's just hormones" a couple times a day to myself to keep myself calmed down. I will not let the hormones control my life.


Lack of sleep- Going on 2 weeks now with not sleeping more than 3.5 hours at a time has been rough. Not as rough as it was with my first child, but rough still. I have a policy that up to 2 weeks you feed them at least every 4 hours at night and every 2-3 during the day. I have to practically strip her naked to wake her up to eat at night, but in the long run, I know she needs the nutrients more then her sleep. After her 2 week checkup we will see if the Dr. oks me to start trying to let her sleep through the night on her own....I hope so!

The Ugly

Menopause- Well not really, but I feel like I could be on a commercial for a woman going through menopause. I have hot flashes and cold sweats at night. It's horrible. I wake with my pillow soaked and have to flip it over when I get back to bed. It's getting better each day, but I am praying for the cold weather right now!


Hives- BY FAR THE WORST! I did not have this with Aiden, but I think it is somewhat common with women. I had a friend who broke out in hives for months and then found out she was pregnant and it was a side effect. I am experiencing this postpartum and it is very uncomfortable. I try my hardest not to scratch them and take benadryl each night to help out.


Body Image- There is a little known secret (really known quite well) that even though the baby comes out, it doesn't mean that your body goes back all at once. In fact, it takes up to 2 months for all your organs to return to their normal spots and your women parts to shrink back to their old size. (I like the pic above because it shows how your organs change.) I think I blocked out this part with Aiden. I was calling myself Humpty Dumpty in the hospital, as I felt like my stomach was long, big, and awkward just like the sketches you see of Humpty Dumpty  In addition, I made the stupid mistake of weighing myself yesterday. There was a little part in my mind that hoped I would step on that scale and have only 10 pounds to lose, though I am not one of those lucky women. I gain the weight with my pregnancies (50 pounds with both) and will have to lose the weight again like I did with my first. I honestly should have waited to weigh myself until I was a full 2 months postpartum, because the damage on the scale might not have been so bad :)

Well, that is my postpartum life--the good, the bad, and the ugly. Although there are two negative categories (bad and ugly) I don't want to detract on how much I am so happy to have this new little girl in my life. I love being a mother and the good, bad, and the ugly all come with this task. I would take all the negative (and more) for all the positives that come from my children any day!

Baby 2.0: Please Welcome Remy

After 39 weeks of anticipation, I am excited to finally introduce to you:

Remy Leola

She was born a few days ago and weighted a whopping 6 pounds 8 ounces. She has the blackest, thickest hair I have ever seen on a baby.

Her older brother is somewhat fascinated by her. (Here he is counting her toes.)
For the most part he still doesn't quite understand what to do with her, but he is adjusting fine. 

I have to say, having a kid the second time around appears to be so much easier then the first time. (Read the blog, Please Welcome Aiden.) I so far have seemed to handle the lack of sleep better and nursing doesn't appear to be quite as challenging as the first time. I luckily have the help of my in-laws who are staying with me for two weeks, so the adjustment has been made so much easier by them! 

With that said, the normal duties of cooking, cleaning, and blogging will again be put on the back burner until I have adjusted to being mother of two. I look forward to the next few weeks of quiet times holding her and not so quiet times while playing with her older brother.

Baby 2.0: 10 Days To Go, 10 Things To Look Forward To

It's officially 10 days away until the arrival of our little girl and we are so excited! I am excited, but also scared. I periodically throughout the day freak out a little and wonder how I am going to manage having two kids. I am scared for the sleepless nights, losing my patience with Aiden (due to lack of sleep), not being able to pick Aiden up (due to c-section), managing working from home with two kids, and overall just how I am going to keep up with all the things I do now! 

With that being said, I am also quite excited for the baby to be here and I am trying to focus my attention on all the positive things I look forward to with this new little one. Having a baby is such a fun experience, but there are things that are sometimes never fun with pregnancy. I decided it would be fun to make a list of all the things I am looking forward to once this little girl comes into the world and I am not pregnant. This list is in no particular order, just random thoughts of happiness I think about periodically. 

1. First Smiles
The picture above is actually Aiden's first smile! 

Yep, I know she will be almost 2 months before she actually gives me a smile, but it is always so fun to see your child smile for the first time.

2. Her Big Brother 

I have these magical thoughts that Aiden will be such a good older brother-- help his mama out a lot with her and be best friends with her. In reality, I know that he probably will try to touch her eyeball the first time he holds her and most likely will be a little jealous for a the first few weeks. He has become quite the little helper in the last few weeks, so I am sure after an adjustment period he will turn out to be quite the help with her and a great big bro!

3. A Good Hard Workout

There is nothing I love more then a good hard workout. The kind that  you wake up the next morning and feel the sore muscles. It makes me feel like I am doing something good for my body. I haven't been able to work out for the last 4 weeks due to my stomach muscles stretching. I look forward to a good sweat session and some sore muscles!

4. Wine 

I miss wine so much. I have been able to keep myself entertained this pregnancy with some pretty good NA beer (Buckler I have found to be the best) but I just enjoy a nice glass of a red wine once in a while. I am looking forward to a nice glass of some Cabernet Sauvignon very soon! 


5. A Long Run

It’s my time alone, without kiddos, with music in my ears, thinking about how nice the neighborhood looks, who’s landscaping I would redo, and really anything I can think of. Running time is my time. I won't be able to run until 8 weeks after the surgery, but I am so looking forward to that run. It will be November by then, so it might be a cold one!

6. Her Dad

My husband is a great father. He is so good with his son, patient yet firm, loving and teaching, but I have a sneaky feeling that this little girl might wrap him around her finger faster then he thought possible.

7. Pink, Purple, and All Things Girly 

Don’t get me wrong, I love my little guy, but there is something so fun about being able to introduce more girly things into our house.  It’s going to be so fun to be able to dress her in such girly colors as pink and purple...those colors that have only been in my wardrobe. Also, I can't wait to put makeup on with her and adorn her head in cute headbands and tutus. 

8. Full Caffeinated Coffee


I drink half caff since I have been pregnant and I really am looking forward to a normal cup of coffee. I cheat every once in a while and drink a fancy coffee out somewhere, but it will be nice to wake up and have a full caffeinated cup of coffee soon.

9. Touching My Feet

I can still technically touch my feet, but man it’s tough! Painting my toenails and putting on shoes is so hard when you have this huge belly! I can't wait to be able to put socks on without grunting. 

10. Her

The number one thing I am looking forward to is her. To see who she looks like more, her hair color, her little hands, her little feet, and her little face. Her learning to smile, roll over, walk, talk, and become my little girl!

Baby 2.0: The Nursery Reveal

The big nursery reveal day is finally here!! It's officially 6 weeks until we can expect to see the face of our little girl! In May, we found out our second child was going to be a girl and I started scheming ideas for the girl nursery (see post here). I believe, after months of work, I am finished with the nursery-- minus any little items I might find after this post to help decorate the room. Also, as for baby 2.0 projects, this should be one of the last posts on the subject until she arrives...should be, but might not be. (To see more posts about Baby 2.0 you can click here.)

This room is located in the front of our house and our largest bedroom. Like the rest of our house, it was a very dated 1978 room. Complete with the swag window treatments, plastic blinds, and dated ceiling fan. We have used this room as our guest room and basically our overall storage room. 

I really wanted to keep a queen bed in the room for me to crash in on those nights when she is having trouble sleeping. I had a bed in the room with Aiden and LOVED it! Also, my husband appreciates the quiet when he is trying to sleep and the less disruption of me getting in and out of bed. 

I went for a pink and green color scheme to the room and wanted to add in some trees to the design. This is what it looked like when you walk into the room before:

I painted wide stripes on one wall to create a little depth to the space and I painted the trees on the wall for some nice contrast to the pink. The trees look black, but they are really brown. The day I took the pictures it was just really hard to get the lighting right, so sorry the trees look black.

A closer look at the crib, rocker and other side of the room. You can see half a clock, which was a clearance hobby lobby find for $5! Also, you can see the super cute and easy lamp shades I recovered.


The rug was also found on clearance at Kmart, but can't remember the price. I think $13 or something like that.


Here is the room looking at the front door of the room. This is a better view of the fan, which I would have loved to switch out! 

Here is the after. I really wanted to change out the fan in this room to a chandelier of some sort, but I made my husband a promise that anything done to this house would be paint only since we plan on building a new one in a few years. I did, however, update the scones to look less dated than the previous tulips.

This is the before view of our closet. I hated these closet doors! There was no bottom track, so they smash your fingers very easily and slide off their top track which is super annoying to get back on. 

Here is the after view of the closet. I sewed the curtains and hung curtain tie-backs, which I re-purposed from the previous window treatments in the room. (They were gold and holding the swag curtains in the middle.)

I also installed a closet organizer to help keep the closet looking cleaner. The hamper actually belonged to a relative of my husbands and use to be cream colored. I spray painted it green to add some more green to the room.

I am obviously in love with my Super Easy Basket Tags. They are just another way to keep the closet organized. 

If you can't tell....I have hit quite a few garage sales, so I think she is set on the clothes!!!

I am happy to have it finished and really liked the way it turned out! I think at some point in the future I will need to devise some sort of book storage in the room, but I have a few years for that...and maybe might have another house at that point too. We will see....
